Chocolate Hazelnut Crepe Cake


Sometimes it's just a good thing for us to be challenged in the kitchen.  To walk into the hearth of the home, and feel undaunted with a crazy new recipe.  I think it's good for the soul, and certainly excellent for our self-esteem, to be able to impress with something we've made with our own two hands.  
Thus, the decision was made to spend most of Sunday making a 17-layer hazelnut crepe cake.  I wanted to show my wonderful DC cousin that her recent birthday did not go unnoticed, and that she is worthy of a wonderfully decadent dessert.  I also wanted to face my fears of creating crepes and pastry cream from a handful of ingredients.  I'd say both were accomplished. 


Chocolate Hazelnut Crepe Cake (from Smitten Kitchen, 2012)
Crepes:
9 Tbps. unsalted butter (for both crepes and pastry cream)
2 1/3 c. whole milk
6 large eggs
1 1/2 c. flour
1/8 tsp. salt
1/2 c. sugar

Hazelnut pastry cream:
1 c. hazelnuts
1 c. confectioner's sugar
2 tsp. vanilla extract
1/4 tsp. salt
3 1/3 c. whole milk
7 Tbsp. sugar
5 egg yolks
5 Tbsp. cornstarch
butter leftover from crepes

Chocolate ganache: 
6 oz. chocolate chips
1/4 c. + 2 Tbsp. heavy cream
1 Tbsp. vanilla extract


Make Crepes:
1. In a small saucepan, brown all butter according to these instructions.  Let cool to lukewarm.
2. In a blender, combine milk, eggs, flour, salt, sugar, and 6 Tbsp. browned butter.  Cover finished mixture and refrigerate for one hour or up to 2 days. 
3. When you're ready to actually cook the crepes, preheat a medium non-stick skillet or crepe pan over medium-high heat.  My pan is super non-stick, so I could skip the buttery, but you may want to brush  your own with melted butter to ensure nothing clings to the surface.  
4. Pour 1/4 c. batter into skillet and quickly swirl it around until it evenly coats the bottom and cook, undisturbed, until the bottom is golden and top is set (1-2 minutes).  Carefully flip and cook on other side for 5-10 additional seconds to set.  It may take you a couple to get the hang of it, but the batter makes a TON of crepes, so no need to fear.  You can do this!  There are a few good videos on YouTube to walk you through the process if you want to visualize it; I'd start with this one, and the pouring/flipping starts at the 1:40ish mark.
5. Transfer finished crepes to a plate and just stack; they won't stick together.  I found that the batter actually made close to 25 crepes, but you'll only need 16 or 17 for this recipe, as the pastry cream only makes so much. 


Toast/Skin Hazelnuts:
1. Preheat oven to 350 and spread hazelnuts on a baking sheet.  Toast for 10 minutes, rolling around halfway through.  Remove from oven and let cool. 
2. Rub nuts between your palms to remove skins, and discard. 


Make Hazelnut Pastry Cream:
1. In a food processor, grind nuts, confectioner's sugar, extract, and salt into damp-looking crumbs that combine in small clumps.  Do not over mix, or you'll make a hazelnut butter!
2. In a saucepan, combine the hazelnut paste, milk, and sugar over medium-high heat and bring to a simmer, stirring a bit so it doesn't scorch.  In a medium bowl, whisk together yolks and cornstarch until smooth.  Stream in small spoonfuls of the hot milk into the yolk bowl slowly, until you find that the bowl is hot.  
3. Now, reverse.  Slowly stir in yolk mixture to milk saucepan, whisking constantly, until the two are combined.  Continue whisking while you bring the mixture to a boil and cook for 2 minutes; it should thicken upon boiling, to a loose pudding consistency.  Remove from heat and stir in remaining 3 Tbsp. browned butter.  
4. Transfer to a bowl, press plastic wrap on top of cream, and refrigerate until set, probably about two hours. 


Assemble Cake:
1. Lay first crepe on plate and spread with 1/4 c. pastry cream.  Repeat with remaining crepes until you're out of pastry cream.  Chill in the fridge until you're ready for the ganache.


Ganache:
1. Melt all ingredients in a double boiler until smooth, but thick.  Remove cake from fridge, pour ganache on top and gently push some off the sides, so it's there are a few drips on the edges.  Set cake in fridge until the chocolate is set.


Finally....slice and eat!

Birds and...studs?

Well, I didn't take a picture of my actual birthday outfit.  No, no, not my birthday suit, but what I wore to dinner at Vidalia, where JP treated me to a feast.  This, what I wore to dessert and a drink at Blue Duck Tavern the day after the big 2-5, will have to do.  And honestly, I'm more glad I caught this outfit on film (even though it didn't come out perfectly).  This dress has such a quirky print on it, and I thought it would look cool toughened up with the studs on the heels of these heels.
Which I have had longer than I've been dating JP.  They were a little pricey for TJ Maxx, but I couldn't resist the gunmetal finish with pyramid studs on one strap and along the sides and heels.  Fabulous purchase.
Um, I was pretty psyched about my drink (a very fruit-filled sangria) with flambe molten chocolate cake.  Yes, chocolate cake that was soaked in whiskey and lit on fire when it got to the table.  Man, what a birthday!

Top 8 Outfits of Being 24

Today is my Golden Birthday.  25 on 25.  Man, I guess I'm officially a grown-up now.  Is it all downhill from here?  If so, I'd better appreciate my cute outfits now!
I wore this breezy outfit to the Royal Wedding Garden Party at Hitched back in April.  Kind of a casual bridal look: all white, strappy heels, statement necklace.  I felt really, super lovely at the event, even if I didn't get to strut around in real wedding dresses like the Hitched associates did.
Yes, I know I wore this relatively recently, but I love it!  Great colors, great shoes, amazing necklace.  I'd wear this to work every day if I wasn't afraid of weirding people out.
I never posted this outfit, but I wore it all day before JP proposed on New Year's Eve.  We spent the afternoon wandering around St. Aug with Mia and our good friends (and recent homeowners!) Joe and Jenny.  It was a great vacation ensemble, and I love that I remember that lovely day when I look at this picture.  (BTW, shirt, sweater and shorts: GAP, shoes: Michael Antonio, necklace: gift from Haley, scarf: Ann Taylor.)
Remember when I wore this to a wedding brunch?  I saved this outfit for weeks before deciding that was a perfect excuse to wear it, and felt gorgeous.  No, I don't have self-esteem issues.  Is that obvious?
Perfect weekend outfit.  Intricate earrings, dark jeans, unbelievably soft cardigan. 
I wore this to a particularly tasty brunch at Dupont Hotel here in DC back in January, and felt so mod.  Love that pink to break up an all dark ensemble!
Perfect layers.  The belt gave me a waist, the cardigan adds a pop of color, and this scarf is actually from my mom's collection (did you realize that I very sneakily brought this home with me?). 
This photo is from my recent trip to Pensacola to see Haley, when we spent an hour or two at the beach.  There was a time in the not-so-distant past when I would not have wanted to post a picture of me in a bikini.  But can I share a secret with you?  I love my body.  It's capable of amazing things (like running 10 miles, doing 60 push-ups... spaced out, cuddling with the people I love), and has never let me down.  Why shouldn't we celebrate ourselves?
In my 25th year, I'm looking forward to getting even more comfortable in my wonderful skin, marrying the love of my very life, eating beautiful meals with my closest friends and family, and traveling to new places.  And yes, I'll probably bring this bikini with me.  (Sunglasses: H&M, Top: Target, Bottom: GAP)

Yesterday was my wonderful Grandma in North Carolina's birthday, and she deserves the best weekend there could be.  She's brave, strong, and unbelievably funny, and I love her a whole bunch!

Happy Birthday, Mommi!

I won't say exactly how many years ago the blessed event happened, but 40-some-odd years ago, our Mommi was born!  Hooray!  So, in honor of her birthday, I have assembled a list of 5 things you should know about Lora Fegley:

1. She plays a mean game of croquet (and is also totally adorable with a sweater slung over her shoulders).


2. If you mix Greek music and hand-made instruments, she is a dancing machine.

3. She could have been a world-famous surfer...

4. ...but she decided instead to go to school and set a really really good example for her daughters.

5. She loves (loves!) Publix subs.

6. She is the best best best Mommi ever.  Abbi and I are are so lucky to have her as a fantastic role model of everything that a woman should be: kind, funny, understanding, and strong. 
Oh, and a good dancer.

Yes, I realize that was 6 things, but really, how can you sum up a woman like her with only 5??

I love love Restaurant Week here in DC!  The best places in town all have special, prix fixed menus for lunch and dinner that are a fraction of their usual cost, and most restaurants actually extend their specials for an extra week (or two!).  We were lucky enough to grab a reservation for Sunday night at Oyamel, a completely delicious upscale Mexican restaurant run by Jose Andres.

According to the website, dress is "upscale casual," which I took to mean, "Find a crazy print and tone it down a bit with a neutral." This dress is super, super fun, with the cowl neck and amazing print. I like how the black clutch and heels help ground the colors and keep it wearable. A great outfit to close out an eventful week!

24

23 was a pretty great year, and gave me ample opportunities to explore myself and grow more into the person I want to be.  I experienced my first big snow storm (look at that smile above; for a Florida girl, making snow angels is a blissful thing!), graduated from my Masters program, and traveled further south than Key West.  I'm really looking forward to 24, though, and figuring out my first grown-up job, moving into an apartment with amazing views of Georgetown, and traversing the terrain of being a twentysomething!
Currently, I'm working through a 770 page tome on military-created vampires (so looking forward to sharing it with you!), so will leave you with a list of some great books I read while 23.  There's so much wonderful literature out there!
The Help, by Kathryn Stockett
Chick lit without all the cheesy romance, this book narrates the lives of three women in Jackson, Mississippi in the 1960s as they combat racism in their own ways.
Hunger Games, by Suzanne Collins
This book about a teenage girl's struggle to stay alive during a competition of life and death will keep you on the edge of your seat until the very end.  Part one in a trilogy.
Graceling, by Kristin Cashore
A young adult novel about a girl with unnatural powers who goes on the run with the prince of her kingdom.  It's fantasy with a foot in reality and a strong heroine who isn't afraid to speak her mind.
The Book Thief, by Markus Zusak
A heartbreaking account a one family who hides a Jew during the Holocaust in Germany.  Keep a box of tissues handy.
Animal Farm, by George Orwell
I know, I know, pretty much everyone has read this political satire about a farm taken over by animals who aim for equality, but end up with something much more akin to communism gone wrong.  If you're one of the few who haven't, it's definitely worth your time.
The Immortal Life of Henrietta Lacks, by Rebecca Skloot
The true story of a black woman whose cancer cells became a medical phenomenon, although her family did not find out about it until 50 years later.  A fascinating account of racial inequities in the medical field.
